Graavi Lohi


                                       Graavi Lohi (Gravlax)

To make Gravlax is super easy.  They taste great and make a quick snack and go nicely on a bagel with cream cheese and chives for breakfast. This recipe was shown to me by my mother-in-law Taru. Give this recipe a try! 

Ingredients:
Two 8oz Fillets of Salmon
1/4 cup of Salt
1/8 cup of Sugar
1 Tbsp Dill finely chopped

In a bowl mix together the salt, sugar and dill.  


Place one of the salmon fillets skin side down on a rimmed plate.  Spread the salt and dill mixture over the salmon to cover well. 


 Place the second piece of salmon on top of to the salmon and salt mixture with the pink side down.  Wrap the pieces of salmon together tightly with plastic wrap. Place on a plate.  Put another plate on
top of the salmon and weight it down with something such as a can or food or a cleaned rock. 
Put the salmon in the refrigerator for 12 hours.  Turn the salmon over and put it back into the refrigerator for another 12 hours.  After about 24 hours take the salmon out and remove the salt mixture.  Slice the salmon into thin slices.  Serve with fresh dill.
